Zucchini
Zucchini might be humble, but around here it is one of the hardest-working vegetables in the field. We choose tender-skinned varieties that stay firm on the grill and melt into sauces and breads. Harvested young, when the seeds are still small and the flesh is sweet, our zucchini slices up beautifully for kabobs, sautés, and skillet suppers. A quick drizzle of olive oil and a dusting of herbs is all it takes to let that delicate flavor shine.
